The Pereira family has been cultivating coffee for over a century. Their farm, Fazenda Santa Clara, is located in Mantiqueira de Minas, famous for its coffee cultivation, where it stretches out over 350 ha. Given the farm’s size and relative flatness - the elevation fluctuates between 930 and 1050 masl - mechanical harvesting is the norm here. Through the use of highly sensitive tools only the full ripe cherries are picked per pass, and additionally, in selective areas on the farm, manual harvesting is necessary for accessibility reasons. In such cases they use electrical combs - ‘derricadeiras’ - to strip ripe cherries of the trees through vibration which are caught in tarps. After harvest, cherries are laid out to dry in thin layers on patios under direct sunlight and turned frequently to ensure maximum cup quality.
