El Vergel Estate is operated by the Bayter family in Tolima, Colombia. Their agricultural journey began in 1995, with coffee cultivation starting in 2010 and the first specialty varietals harvested in 2015. What followed was a decisive shift toward quality-focused production and direct engagement with international specialty markets.

After facing volatility in the local coffee trade, the family chose to invest in innovation and value creation at origin. That decision reshaped the farm’s direction. By 2017, they were actively refining their post-harvest practices and experimenting with controlled fermentation methods designed to elevate consistency and flavour precision.

In 2019, the Bayter family founded Forest Coffee, a project aimed at connecting Colombian producers directly with global roasters. Today, that network includes hundreds of coffee-growing families across multiple regions, with El Vergel Estate serving as both a production site and a hub for processing development.

The estate combines agricultural experience with a forward-thinking approach. Quality control, traceability and technical refinement are central to their operation. Every lot is processed with a focus on clarity, stability and expression of terroir, supported by careful drying and stabilisation protocols before export.

El Vergel represents a modern Colombian coffee project - rooted in decades of farming tradition but driven by innovation, collaboration and long-term sustainability.
